A coffee can be perfectly prepared and still disappoint.

Two coffees from the same country can taste completely different. The same variety can develop very different flavour profiles depending on where it grows, how it is processed, how it is roasted and how it is finally prepared.

That is what makes coffee so interesting. To truly understand it, we need to look further than the espresso machine. We need to look at the plant, the farm, the variety, the climate, processing, fermentation, roasting, extraction, aroma and ultimately our own sensory perception. This is where Coffee Connoisseur begins.

Beyond flavour: what defines the cup

There is no shortage of information about coffee. Recipes, brewing methods, flavour wheels and technical advice are available everywhere. But knowing individual facts is different from understanding how they are connected. Why does a natural processed coffee taste different from a washed coffee? How does fermentation influence flavour? Which characteristics come from the coffee variety itself, and which are created during processing or roasting? Why can two people experience the same cup differently?
Coffee Connoisseur is designed to help you understand these relationships. Instead of simply learning what to do, you start learning why things happen. That knowledge can be useful in many different roles: behind a coffee bar, in a roastery, when buying coffee, when training a team or when creating a stronger coffee program for a restaurant or hospitality business.

WHAT WILL YOU LEARN?

During six intensive days, we move through coffee step by step. You will explore coffee as an agricultural product before looking at how processing, origin and variety influence its potential. From there, we move towards the cup. Sensory exercises, cupping and aroma training help you develop a clearer understanding of what you taste and smell and, more importantly, where those characteristics may come from.
