Learn the roasting and cupping basics with our Onan Roastmaster and Q Grader Elena! She will take you through the technicalities of the roasting process, have you roast with her, teach you how coffee is cupped and evaluated, and you get to make your own coffee blend to take home.
The art of roasting
Step into the heart of our roastery! In this segment of our workshop, you’ll unravel the mysteries of turning green coffee beans into the aromatic, flavourful roast that you love. You will learn:
- How the Roaster Works: Get a comprehensive explanation of our state-of-the-art roasting equipment and how each part contributes to the process.
- Science Behind Roasting: Delve into the basics of the chemistry of coffee roasting. Understand what happens inside the coffee bean as it heats and develops.
- Key Factors in Roasting: Learn what to watch for during the roasting process, from temperature control to time management, and why these factors are crucial for a perfect roast.
- Roasting Profiles: Discover the significance of different roasting profiles and how light, medium, and dark roasts each create unique flavor characteristics.
- Hands-On Roasting: Roast your own batch alongside our expert roastmaster, Elena. Experience the transformation firsthand and witness the magic as green beans turn into aromatic roasted coffee.
The art of cupping
After mastering the roasting process, it’s time to refine your palate and become a coffee tasting expert through the practice of cupping. What You’ll Learn:
- Different coffee Varieties and Origins: Cup a selection of different coffee varieties from multiple countries and processed differently. Understand their destinctive flavour profiles.
- Proper Tasting Techniques: Learn the professional method of cupping, including how to assess aroma, acidity, body, and finish.
- Flavour Description: Enhance your coffee vocabulary and learn how to articulate the complex flavours and aromas you encounter during cupping.
- Make your own Blend: Put your new skills to the test by creating your own coffee blend. Experiment with different proportions and flavour profiles to craft a unique blend that you can take home and enjoy.
Meet Elena, YOUR TEACHER
Elena’s coffee journey began in Russia in 2009, where she started as a barista and quickly progressed to coffee roaster. Her passion for coffee brought her to Belgium, where she found her place with us. As the roastmaster, Elena ensures that every bean you buy or taste at our shop is roasted to perfection. With a Q-grader certificate and extensive training from the Coffee Quality Institute (CQI) in roasting, barista skills, and green coffee, Elena is dedicated to sharing her knowledge.
Her expertise and passion for the wide range of coffee flavours and aromas drive her to innovate and maintain high standards in our coffee assortment. She has a high commitment to quality!

LANGUAGES
DUTCH / ENGLISH : We adapt our workshop language to English or Dutch based on the group, and can easily switch between both!
TIME
Please come in time, as we have a tight schedule and we really want to offer you the best experience possible!
DRESSCODE
Dress comfortably and not overly warm, as you will be roasting!
REFRESHMENTS
Of course, we provide delicious coffee, and water!
