Brewing tea

Brewing a cup of tea is an elegant though reasonably simple process, resulting in a tasteful , soothing extraction that can come in many flavours!
Brewing tea asks for a few basic rules to be followed.  And with just that little bit of extra attention, your brew will be fine-tuned to your taste and definitely worth it!

Basic brewing

Brewing a cup all starts with the tea of your choice and a few basics to follow according to variety. Follow these simple guidelines and improve your tea brewing skills in a jiffy!

These 3 main rules apply to any kind of tea or infusion brew:

•   use a tea infuser that is wide enough for the tea to spread

•   use bottled water

•   watch the water temperature

But also, go crazy and experiment with the steeping time. The range of differences and possibilities will surprise you!

 

Green tea

•    3-4 g  300ml water
•   3-4 min. steeping
•   85°-90°  temp.

black tea

•   3-4 g 300 ml water
•   3.5-4 min. steeping
•   90°-95°  temp.

oolong tea

•   2-3 g  300 ml water
•   3-4 min. steeping
•   85° temp.

white tea

•   2-3 g  300 ml water
•   3-4 min. steeping
•   80°  temp.

 

 

Milky tea drinks

The Indian tea culture was the first to combine black tea, hot milk and a mixture of aromatic spices to create a drink we all know as ‘chai’. Meanwhile it has become a well-loved classic and lots of creative and tasty variations have been created ever since.

Iced tea and infusions

Classic Chai-Latte (300 ml cup)

•    Use 3 g of ONAN’s Spicy Chai blend.
•    Place the tea in a personal tea bag, make sure it is closed off well.
•    Place the tea bag in the cup.
•    Add 1 cube of brown sugar.
•    Add about 60 ml of 95C° hot water.
•    Leave to steep for 2 minutes.
•    Bring 240 ml of milk up to 70C° while whisking (optional soy or almond milk…).
•    Slowly pour the hot milk on top of the extract with the tea bag.
•    Leave to steep for another 3 minutes or more.
•    Give a stir and finish with some fresh cinnamon on top!

matcha green latte

•    Use 2 g of ONAN’s matcha tea powder.
•    Place the powder in a matcha bowl or other wide cup.
•    Add 40 ml of 80C° hot water while whisking away and keep whisking, preferably with a bamboo matcha whisk, for about 30 seconds until foam appears on top.
•    Bring 240 ml of milk up to 70C° while whisking (optional soy or almond milk…).
•    Slowly pour the hot milk into the matcha extract in a circular motion.
•    Enjoy your homemade matcha latte!

Cool & fruity infusions

All those different tea varieties and colourful infusions are perfect to play around with and experiment. Create iced infusions with wonderful, crazy new flavours or keep it classic and simple. You can add some fresh fruits, juice, syrop or other flavour maker to give each infusion a personal touch.

Iced tea and infusions

 

Pomegranate-Lime iced tea

•    Bring 1L of water to a boil.
•    Turn the heat off.
•    Add 60 g of ONAN’s pomegranate fruit infusion.
•    Cover with a lid.
•    Leave to cool for the night (about 10 hrs).
•    Pour the extract through a colander and into a container.
•   Serve with ice cubes and some slices of orange and lime.
•    Keep it fresh in the fridge.

Cool pineapple-apple tea

•    Bring 1L of water to a boil.
•    Turn the heat off.
•    Add 80 g of ONAN’s pomme d’amour fruit infusion.
•    Cover with a lid.
•    Leave to cool for up to 5 hrs.
•    Pour the brew through a colander and into a container.
•    Serve cold with some fresh mint and a slice of  lemon.
•    Keep it fresh in the fridge.

Preparing a tasty, cold brew from tea leaves requires a bit more attention for water temperature and steeping time, otherwise the tannins can be a spoiler. So avoid hot water and do not steep the tea too long. Here is a simple way to start brewing your very own iced tea drinks!

Icy Ginn fizz

•    Use 1 L of cold filtered or bottled water.
•    Put 12 g of ONAN’s Ginn Fizz green tea blend in a personal tea bag.
•    Make sure the tea bag is closed off well to reduce sediment.
•    Place the tea bag in the cold water.
•    Add some fresh lemon or lime.
•    Leave to steep for 4 hrs.
•    Remove the tea bag and fruit slices.
